Carmel Nut Coffee Cake

20 Rhoades frozen dinner rolls (room temperature)
1 pkg. butterscotch pudding (not instant)
1 c. brown sugar
1 cube margarine
1 c. nuts

Grease bundt pan. Sprinkle with 1/2 of pudding on bottom of pan. Next add chopped nuts. Melt margarine and brown sugar together. Cut rolls in halves or quarters. Drop into pan, distributing evenly. Sprinkle remaining pudding mix over roll pieces as each layer is added. Drizzle melted sugar and margarine mixture over all. Cover with tin foil. Set in oven to rise overnight. Next morning, remove foil.
Bake at 350 degrees for 30 minutes. Cool for 5 minutes. Then invert over serving platter.

Spiced Peaches

Drain syrup from 1 large can of cling peach halves. Combine syrup with 3/4 cup dark brown sugar, 1/4 cup vinegar, and 1 stick cinnamon. Boil and simmer 5 minutes. Add fruit and cook 5 minutes. Stick 2-3 whole cloves in each peach. Put peaches in bowl and pour syrup over and let stand.

Banana Split Salad

1 large (12 ounce) container of Cool Whip
1 can Eagle brand milk
1 can Wilderness cherry pie filling (or other brand)

Mix ingredients well.

Add:

1 (8 ounce) can crushed pineapple, drained
3 large bananas, chopped

Mix altogether and chill. Pecans are optional

Two layer salad


1 (3 ounce) pkg. lemon jello dissolved in 1 c. boiling water
1 (8 ounce) pkg. Philadelphia cream cheese
1 (9 ounce) container cool whip
1 (3 ounce) pkg. lime jello
1 (15 ounce) can crushed pineapple, drained, save juice

Add cream cheese (room temperature) to hot lemon jello; stir until dissolved. When cool, add crushed pineapple and cool whip. Put in flat dish. (7 by 11 inch) and refrigerate until set. Dissolve lime jello with 1 cup hot water and pineapple juice, combined. Cool. Pour over first mixture and refrigerate!

Banana Split Cake- no cook recipe

First layer:
1 stick margarine, melted
2 c. graham crackers, crushed
Mix together and press firmly into bottom of 9 by 13 inch pan.

Second layer
2 eggs
2 cups powdered sugar
2 sticks soft margarine
Mix with mixer on low for 10 minutes. Spread over first layer.

Third layer
Slice 3 bananas over first and second layers.

Fourth Layer
Spread 1 large can crushed pineapple, drained over the other layers.

Fifth layer
Spread 1 (9 ounce) container cool whip over the other layers. Garnish with chopped nuts and cherries.

Chill 2 hours and cut into squares.

Fridge Pickles

Wanted to share an easy fridge pickle recipe:

4 c. sugar
4 c. vinegar
1 1/2 tsp. dry mustard
1 1/2 tsp. celery seed
1 1/3 tsp. turmeric
1/3 c. pickling salt
3 garlic buttons, minced

Boil together all the ingredients for 5 minutes.
Pour liquid over 1 gallon sliced cucumbers placed in large gallon jar.
Store or shake for 9 days (storing mixture in fridge). On 9th day, enjoy!

Add 3 medium onions, sliced on the first day, if desired. Also a bunch of sliced carrots is great!

Lentils, brown rice and caramelized onions

Mmm! I got online to find a recipe for lentils and rice as I wanted some for lunch and found this recipe.

I wasn't sure what to think of the recipe since it called for cinnamon, but it turned out delicious! It made a lot but now that I'm eating it, I don't know how much will be leftover.  :-)

Salsa recipes

When you don't have fresh tomatoes, but you're craving some salsa, try this recipe. 

Salsa mix in a jar

1 1/2 cup dried cilantro
1 tsp. garlic powder (more to taste)
1/2 cup dried chopped onion
1/4 cup dried red pepper flakes
1 T. Salt
1 T. pepper

Keep in bag or jar. To make, add 2 T. mix to 1 can Mexican style tomatoes (10 ounce can)


Another favorite salsa recipe that we like to make is this:


Black bean salsa

2 cans (15 ounces) black beans, rinsed and drained
1 can (15 ounce) whole kernel corn, drained
1 can (10 ounce) diced tomatoes with green chilies, undrained
1 jar (7.5 ounce) roasted red peppers, drained and diced
2 plum tomatoes, chopped
1 medium red onion, finely chopped
4 green onions, finely chopped
2/3 cup minced fresh cilantro or parsley
2 garlic cloves minced
1/3 cup orange juice
1 tsp. ground cumin
1 tsp. grated orange peel
1/2 tsp. salt
1/8 tsp. ground pepper
Tortilla chips

Combine all ingredients except tortilla chips. Cover and refrigerate at least 2 hours. Serve with chips. Yield 8 cups.

Fresh salsa recipe


Fresh Salsa by Libby.

She shared this recipe with me years ago. They have since moved on themselves and are missionaries.

2-3 fresh tomatoes
1/2 small green pepper
1/2 small onion
jalepeno or banana pepper to taste
1 teaspoon minced garlic
 dash of salt

I still have the original recipe that she wrote down in her handwriting. I think of their family often and wonder if they even remember us.

This is the best salsa that I have ever tasted!


Best brownies (jar mix)

This is my favorite brownie recipe.

1 quart jar (if you want to save it for gift giving or storage)

Layer in jar:

1 1/4 cup of flour
1 teaspoon baking powder
1 teaspoon salt
2/3 cup of cocoa
2 1/4 cup of sugar

Attach directions to jar

"To make:

In mixing bowl, Cream 4 eggs and 3/4 cup butter. Add rest of ingredients and stir until moistened and grease 9X13 pan.

Bake at 350 degrees for 25-30 minutes. "

Enjoy!!

I half this batch and bake it in my bread machine. These are really good!
