"Weight Watchers" Southwest Chicken and beans crockpot recipe

Southwest Chicken and Beans- Crockpot recipe




I had this dish at a friend's house. It was so delicious I asked for the recipe.

1 can pinto beans
1 pound boneless chicken (cubed)
1 can low sodium chicken broth
1 can sweet corn drained and rinsed
1 can diced tomatoes with green chilies
1 teaspoon cumin
1 cup salsa
2 Tablespoons cilantro

Place beans and next seven ingredients into 4 quart slow cooker and mix well. Cook on high for 6-8 hours until chicken is no longer pink. Sprinkle with cilantro.

1 1/4 cups equals 4 weight watcher points.

Yummy served with cornbread.
